FLAKES · 8-20 MM

Dehydrated Red Onion Flakes (Kibbled) 8-20 mm

Dehydrated red onion flakes bring colour and pungency: the burgundy skin stays visible after drying and after rehydration. They are the first choice when the onion should not only taste but also show in the finished product, and they rehydrate in 15-20 minutes at one-ninth of the fresh weight.

KlarHarvest supplies them from BRC-certified dehydration plants in Mahuva, Gujarat, with a laboratory report for every lot and shipments from a single pallet.

Dehydrated red onion flakes, 8 to 20 mm, cream flesh edged with burgundy skin, in a loose pile on kraft paper.
  • Sourced from BRC-certified units
  • NABL-accredited lab testing
  • Low minimums · LCL welcome

The range

Red Onion Flakes vs Other Dehydrated Onion Cuts, To Scale

Same onion, same line, same lot documentation - a different particle size.

Drawn to relative scale. The larger the cut, the more visible the onion in the finished product; the finer the cut, the faster it rehydrates.

The product

What Are Dehydrated Red Onion Flakes?

What the product is, why the cut size matters, and what it means for the price per kilo.

Dehydrated red onion flakes are red onion sliced, dried on a belt dryer to about 6 % moisture, then sieved so the pieces fall between 8 and 20 mm. The trade also calls them "kibbled red onion" or "red onion 8-20 mm". Nothing is added: the flavour is the onion's own sulphur compounds and sugars, sharper and slightly sweeter than white, and the colour is the pale pink flesh flecked with burgundy skin.

The cut is specified where the onion should be seen: toppings on bowls, snacks and flatbreads, ethnic ready meals, chutneys and pickles. Because the pieces are large the skin flecks are large too, and that is the visual signal buyers pay for. Dehydrated red onion flakes are also the lightest cut for their volume, so a 20 ft container carries 9-10 tonnes and the freight per kilo is higher than for the finer cuts.

Overview

Dehydrated Red Onion Flakes: Product Overview

KlarHarvest dehydrated red onion flakes come from red onions grown in the Mahuva belt of Gujarat, harvested from March to May and dried within the season at BRCGS-certified plants. The flakes are sieved to 8-20 mm, dried to 6 % moisture or less, and packed with nothing added: no sulphites, no preservatives, no colour, no anti-caking agent. Each lot is tested by an accredited laboratory before it is loaded, and the report travels with the goods.

KlarHarvest trades, it does not dry: the flakes are filled and sealed inside the BRCGS-certified plant we select, and we label and ship them from Pipavav under our own name. A buyer of dehydrated red onion flakes therefore starts with one pallet if that is the need, mixes red and white cuts on it, and gets specification, price, freight and lead time in one quotation within one business day.

Manufacturing process

How Dehydrated Red Onion Flakes Are Made

Eight steps from a cured bulb to a sealed, lot-coded bag. Where a defect can enter the product, the step says so.

Dried red onion slices, cream with burgundy edges, cascading off the end of a stainless belt dryer into a tote.
  1. Red onions in

Cured red onions from the Mahuva belt, harvested March to May, are size-graded at the plant gate and held in ventilated stores; 8-9 kg of them become 1 kg of dehydrated red onion flakes.

  2. Topping and peeling

Tops and roots off, then the loose papery outer skin - while the coloured inner skin stays, because that is where the burgundy flecks come from.

  3. Wash and pick

A chlorinated wash and a picking belt where bruised or off-colour bulbs are removed before slicing.

  4. Slicing

Slices cut to the thickness a large flake needs. No sulphite bath and no added colour at any point in the line.

  5. Gentle drying

A single layer on a multi-stage belt dryer, with a milder temperature curve than white onion so the pigment does not brown, down to 5-6 % moisture.

  6. Sieving to 8-20 mm

Cooled slices are broken lightly and sieved; the 8-20 mm fraction becomes flakes, the fines go to the finer red cuts, and an optical sorter removes browned pieces.

  7. Steam treatment, where specified

Low and Extra Low Bacterial lots pass a validated steam step and are re-dried; Standard tier skips it.

  8. Metal detection, packing and release

Each bag is metal-detected, sealed with its lot code and QR, and held until the laboratory report is issued and you release the lot.

Grading

Dehydrated Red Onion Flakes Grading

Colour as a measured value and defects as a count per 100 g - the two things a grade actually means.

With dehydrated red onion flakes the customer is paying for colour, and colour depth moves with the variety and the month of harvest. So we grade by a measured lightness value rather than by the word "red"; the trade bands are below and the lot's own reading is on the certificate of analysis.

  1. Deep red

    dark red · A grade

    L*58-64

Dense burgundy skin flecks on pale flesh, even through the lot

Deep-pigment varieties, fresh-crop lots March to May

  2. Red

    standard red

    L*64-70

Clear burgundy flecks, pale pink flesh, uniform

Most export lots in season; the usual specification

  3. Light red

    pink

    L*70-76

Sparse flecks, flesh reads pink rather than red

Light-skinned varieties or late-season lots; specify if wanted

  4. Faded

    L*76-82

    Brownish flecks, dull flesh

Over-dried or old stock; not offered for export

    Not exported

Defect limits · per 100 g on the sorted product

  • 5-20Scorched pieces
  • 2-5Skin fragments
  • 1-3Root and top pieces
  • ≤ 0.5 %White admixture, by weight

A narrower colour band or a lower defect limit for dehydrated red onion flakes is agreed at order stage and written onto the certificate of analysis.

Applications

Dehydrated Red Onion Flakes Applications and Industries Served

The uses this cut is specified for most often. Tell us yours and we will say whether it is the right one.

Toppings (bowls, snacks, bakery)

Dehydrated red onion flakes keep their colour through drying, so they show on rice bowls, snack mixes and savoury bakes.

Ethnic dishes

Biryani, pulao and curry kits use red flakes rehydrated or fried; they bring the sweetness and colour the recipes expect from red onion.

Chutneys and pickles

A red flake rehydrated in vinegar or lime holds its shape in chutney, relish and pickle jars and keeps its pink-red hue.

Instant meals

Cup noodles, instant rice and meal kits add red flakes for visible vegetable pieces that rehydrate in the cup within minutes.

Fried-onion alternative

Rehydrated and pan-fried, the flakes stand in for fresh-fried red onion in kitchens that cannot peel and fry every day.

Salads and garnishes

Soaked and drained, red onion flakes go into deli salads and onto plates as a garnish where a raw red onion bite would be too sharp.

In your process

How to Use Dehydrated Red Onion Flakes: Rehydration & Dosing

Three numbers decide how this cut behaves in a recipe - how fast it takes water back, how much, and how little of it you need.

  • Rehydration Fifteen to twenty minutes in cold water, faster in warm, at about 1:8 to 1:9 - one kilo of dehydrated red onion flakes returns the equivalent of 8-9 kg of fresh red onion, flecks intact.
  • Dry addition Into wet cooking with free water - curry bases, kettle sauces, soups - straight from the bag; the flakes rehydrate in process.
  • Dosing Replace fresh red onion at roughly one-ninth of its weight and adjust to taste; the pungency is concentrated with the solids.

Food safety

Dehydrated Red Onion Flakes Microbiology: Standard, Low & Extra Low Bacterial

Flakes baked onto a flatbread have a kill step and take Standard tier; dehydrated red onion flakes rehydrated into a cold salad or a raita do not, and need Extra Low.

Standard

For toppings and dishes that are baked, retorted or kettle-cooked - the default tier.

Low bacterial

Lower counts without the full steam treatment, for stricter specifications and delicate recipes.

Extra Low Bacterial

Steam-treated and re-dried for salads, dips and other ready-to-eat uses with no further heat; values per lot on the COA.

Packaging & export

Packaging and Export Logistics for Dehydrated Red Onion Flakes

Dehydrated red onion flakes are the lightest cut for their volume: a 20 ft box is full at 9-10 tonnes, and the flakes crush under weight, so the stack is as important as the bag. This is how a lot ships.

FAQ

Dehydrated Red Onion Flakes - Frequently Asked Questions

What buyers ask about this cut before the first order. Anything not covered here, send us the question - you have an answer within one business day.

Will the red colour survive cooking?

The burgundy skin flecks stay visible after rehydration. Long wet cooking mutes the colour but does not remove it; in a baked topping it stays as it went in.

How much stronger than white is red onion?

Noticeably: more pungency and aroma, with a slightly sweet finish. Dehydrated red onion flakes are the cut to specify when the onion has to be tasted as well as seen.

Why only 9-10 tonnes of red flakes in a 20-ft container?

Bulk density. Flakes are the lightest cut for their volume, so the box is full before it is heavy; chopped, minced, granules and powder stow 10-13 tonnes.

Can I specify a colour band?

Yes, and you should: deep red, standard red or light red by L* range rather than a fixed shade, because pigment depth varies by variety and season. The lot reading goes on the COA.

Are red flakes and kibbled red onion the same product?

Yes - "kibbled" is the old trade word for the 8-20 mm cut. We always quote the size band, so the term never matters.

Can red flakes share a pallet with white cuts?

Yes. Any of the ten dehydrated cuts can share a pallet - heavier cuts at the bottom, flakes on top - with one document set.

Is a custom size band possible?

Yes. Send the sieve specification you need and we quote against it; the band is agreed at order stage.
