Curry bases
Dehydrated red onion powder dissolves into a curry base or gravy at once and brings the sweetness of fried red onion without the frying.
POWDER · 100 MESH
Dehydrated red onion powder is the full red onion in powder form: instantly soluble, strong, with a warm hue. It is a standard in curry bases and wherever white onion powder is too quiet in flavour. Milled to 80-100 mesh, with a food-grade anti-caking agent available on request and declared.
KlarHarvest supplies it from BRC-certified dehydration plants in Mahuva, Gujarat, with a laboratory report for every lot and shipments from a single pallet.
The range
Same onion, same line, same lot documentation - a different particle size.
Drawn to relative scale. The larger the cut, the more visible the onion in the finished product; the finer the cut, the faster it rehydrates.
The product
What the product is, why the cut size matters, and what it means for the price per kilo.
Dehydrated red onion powder is red onion sliced, dried on a belt dryer to about 6 % moisture, then milled and sifted through 80-100 mesh, roughly 150-180 microns. The trade calls it "red onion powder" or "ground red onion". Nothing is added: the standard powder is 100 % onion, and an anti-caking agent goes in only on request, declared on the label.
The powder carries the red onion's sharper, slightly sweet flavour into applications with no texture to restore: curry bases, marinades and sauce powders, snack seasonings, instant meals. It tints a pale product with a light tan-to-rose cast, which is either the point or the reason to specify white onion powder instead. Dehydrated red onion powder is also the most hygroscopic form, so the liner, the seal and first-in-first-out storage decide its shelf life.
Overview
KlarHarvest dehydrated red onion powder comes from red onions grown in the Mahuva belt of Gujarat, harvested from March to May and dried within the season at BRCGS-certified plants. The dried slices are milled in a temperature-controlled pass, sifted through 80-100 mesh in a dry room and packed within minutes with nothing added: no sulphites, no preservatives, no colour, no anti-caking agent unless you specify one. Each lot is tested by an accredited laboratory before it is loaded, and the report travels with the goods.
We select the plant, we do not run it: the powder is milled, filled and sealed inside the BRCGS-certified unit we choose, and it leaves Pipavav under the KlarHarvest label with our lot record on every bag. That is why a curry-base or snack-seasoning maker can order one pallet of dehydrated red onion powder, combine it with white powder or red granules on the same pallet, and hold a full quotation - specification, price, freight, lead time - within one business day.

Manufacturing process
Eight steps from a cured bulb to a sealed, lot-coded bag. Where a defect can enter the product, the step says so.
Cured red onions from the Mahuva belt, harvested March to May, are graded at the plant gate and held in ventilated stores; 8-9 kg of fresh onion end up as 1 kg of dehydrated red onion powder.
Tops, roots and loose outer skins come off; the pigmented inner skin stays, because it is the colour of the powder. Escaped skin becomes a speck, so the line is inspected continuously.
Chlorinated wash water and a picking belt for bruised or off-colour bulbs ahead of the slicer.
Slices cut to the thickness the dryer needs; no sulphite dip and no added colour.
Single-layer drying on a multi-stage belt dryer on the gentle curve red pigment needs, to 5-6 % moisture.
Cooled slices are milled in a temperature-controlled pass so the volatile flavour survives, sifted through 80-100 mesh with oversize returned to the mill - in a dry room, because the powder is hygroscopic - and bagged within minutes.
Low and Extra Low Bacterial lots are steam-treated before milling and re-dried; Standard tier is not.
Every bag is metal-detected, sealed with lot code and QR, and held until the laboratory report is issued and you release the lot.

Grading
Colour as a measured value and defects as a count per 100 g - the two things a grade actually means.
Powder shows its colour as a tint in the whole product, and with red onion that tint is the reason for buying it. Dehydrated red onion powder is graded by measured lightness before milling; the trade bands are below and the lot's own reading and speck count are on the certificate of analysis.

Applications
The uses this cut is specified for most often. Tell us yours and we will say whether it is the right one.
Dehydrated red onion powder dissolves into a curry base or gravy at once and brings the sweetness of fried red onion without the frying.
Dispersed in oil, yoghurt or brine within seconds, the powder flavours tandoori marinades and dry sauce mixes evenly.
Blended with salt, chilli and spice powders for extruded and fried snacks; the fine grind coats without visible particles.
Instant soups, noodle seasonings and cup meals rely on onion powder for full flavour the moment hot water is added.
Chilli pastes, sambal powders and sauce concentrates use red onion powder for body and a rounder, sweeter heat.
Garam masala, biryani masala and table blends carry onion powder as a base note; a free-flowing grade keeps the blend from caking.
In your process
Three numbers decide how this cut behaves in a recipe - how fast it takes water back, how much, and how little of it you need.
Food safety
A curry base that is cooked takes Standard tier; dehydrated red onion powder dusted onto a snack after frying has no kill step behind it and needs Extra Low.
For curry bases, sauces and instant meals that are cooked - the default tier.
Lower counts without the full steam treatment, for stricter specifications.
Steam-treated before milling and re-dried, for topical snack seasonings and other ready-to-eat uses; counts per lot on the COA.
Packaging & export
With dehydrated red onion powder the packing question is moisture, not space: the box is weight-limited at 12-13 t, and the liner, the seal and the storage rotation decide how the powder arrives and how long it keeps.

FAQ
What buyers ask about this cut before the first order. Anything not covered here, send us the question - you have an answer within one business day.
A little: a warm tan-to-rose cast in pale applications. Where colour neutrality matters, specify white onion powder instead.
Roughly 150-180 microns - fine enough to dissolve instantly and blend without specks.
Only on request, and then declared. The standard powder is 100 % red onion.
Sealed, cool and dry; reseal opened bags at once and work first-in-first-out. Onion powder is hygroscopic.
About 12-13 tonnes. The powder is the densest form, so the weight limit is reached long before the box is full.
Yes - more pungency and aroma with a slightly sweet note, and 1 kg still carries the solids of 8-9 kg of fresh onion. Dose in grams.
Yes. 60-80 mesh and finer than 100 mesh are milled to order; the band is agreed at order stage and confirmed on the COA.
