Sauces and soups
At 3-5 mm, chopped dehydrated white onion softens in 10-15 minutes and melts into a sauce base while still reading as onion on the spoon.
CHOPPED · 3-5 MM
Chopped dehydrated white onion is the all-rounder of the processing kitchen: 3-5 mm pieces small enough to spread evenly through a recipe and large enough to keep a recognisable onion structure. It rehydrates in 10-15 minutes and adds no water to the product.
KlarHarvest supplies it from BRC-certified dehydration plants in Mahuva, Gujarat, the belt that grows most of the white onion the world dries, with a laboratory report for every lot and shipments from a single pallet.
The range
Same onion, same line, same lot documentation - a different particle size.
Drawn to relative scale. The larger the cut, the more visible the onion in the finished product; the finer the cut, the faster it rehydrates.
The product
What the product is, why the cut size matters, and what it means for the price per kilo.
Chopped dehydrated white onion is white onion sliced, dried on a belt dryer to about 6 % moisture, broken and sieved so the pieces fall between 3 and 5 mm. In the trade it is also called "chopped onion", "onion pieces 3-5 mm" or, in some price lists, "kibbled fine". Nothing is added: the flavour is the onion's own sugars and sulphur compounds, concentrated by the loss of water, and the colour is the ivory of white onion flesh.
The cut sits between flakes and minced, and that is exactly its use. It is fine enough to distribute through a sauce, a filling or a deli salad without pockets of onion, yet coarse enough that the pieces are still seen and bitten. It also stows better than flakes: a 20 ft container carries 10-12 tonnes of chopped dehydrated white onion against 9-10 tonnes of flakes, which is a real difference in freight per kilo.
Overview
KlarHarvest chopped dehydrated white onion comes from white onions grown in the Mahuva belt of Gujarat, harvested from March to May and dried within the season at BRCGS-certified plants. The dried slices are broken on a controlled mill, sieved to 3-5 mm, colour-sorted and packed with nothing added: no sulphites, no preservatives, no anti-caking agent. Each lot is tested by an accredited laboratory before it is loaded, and the report travels with the goods.
The plant fills and seals the bags; we do the rest. KlarHarvest selects the unit, writes the lot specification, has the chopped onion filled inside the certified plant and ships it under our own label from Pipavav. For you that means a first order of one pallet, a mixed pallet with flakes or powder if the recipe line needs both, and a quotation with the specification sheet, price, freight and lead time inside one business day.

Manufacturing process
Eight steps from a cured bulb to a sealed, lot-coded bag. Where a defect can enter the product, the step says so.
Cured white onions from the Mahuva belt arrive at the plant gate between March and May, are graded on size and held in ventilated stores. Roughly 8-9 kg of them end up as 1 kg of chopped dehydrated white onion.
Tops and roots go first, then the dry outer skins. A careless peel shows up later as skin fragments in the 3-5 mm cut, which is why this station is checked on every shift.
Bulbs pass through chlorinated wash water and a picking belt where damaged or pink-skinned bulbs are pulled before the slicer sees them.
The slicer is set for the thickness the chopped cut needs. No sulphite dip at any point: the ivory colour is the onion and the dryer, nothing else.
Slices spread one layer deep on a multi-stage belt dryer; the air steps down in temperature over several hours until the product reads 5-6 % moisture.
Cooled slices are broken on a controlled mill and sieved: oversize goes back to the mill, fines go on to minced and granules, and an optical sorter takes out dark pieces.
Lots specified as Low or Extra Low Bacterial pass a validated steam treatment and are dried again; Standard tier skips this step.
Each bag goes through a metal detector, is sealed with its lot code and QR, and waits in the warehouse until the laboratory report is issued. Your release comes before the container is stuffed.

Grading
Colour as a measured value and defects as a count per 100 g - the two things a grade actually means.
A 3-5 mm piece shows its colour on the spoon, so chopped dehydrated white onion is graded by measured lightness, not by the word "white". The trade bands are listed below; your lot's own L* reading and defect counts are printed on the certificate of analysis.
Bright white

L*88-92

Applications
The uses this cut is specified for most often. Tell us yours and we will say whether it is the right one.
At 3-5 mm, chopped dehydrated white onion softens in 10-15 minutes and melts into a sauce base while still reading as onion on the spoon.
Pie, pastry and dumpling fillings take the chopped cut dry; it draws in the filling's moisture and stops a wet mix from weeping.
Coleslaw, potato and pasta salads use the rehydrated chopped cut for even distribution and no raw-onion bite in a chilled product.
Instant noodle sachets, cup meals and dry mixes carry chopped onion because it rehydrates fast in hot water and holds its form.
Sprinkled on the sauce before the cheese, chopped white onion cooks through in the oven time and browns without charring.
Burger, kofta and sausage lines add the chopped cut dry, so it binds free water and spreads onion evenly through the mince.
In your process
Three numbers decide how this cut behaves in a recipe - how fast it takes water back, how much, and how little of it you need.
Food safety
A kettle-cooked pasta sauce has its kill step built in, so Standard tier chopped dehydrated white onion is enough; a cold-filled deli salad or a sandwich filling has none, and needs Extra Low.
The default for processes with a kill step - baking, retorting, kettle cooking - and for most industrial sauce and soup lines.
Reduced counts without the full steam treatment: for sensitive fillings and for customers whose specification sits below Standard.
Steam-treated, re-dried and tested for ready-to-eat use with no further heat - deli salads, cold fillings, dips. Counts per lot on the COA.
Packaging & export
Chopped dehydrated white onion fills a 20 ft container by volume and by weight at about the same point, so the pallet pattern matters less than for flakes and the liner matters more than for powder. This is how a lot goes out.

Ask about your marketQuality
What is certified, what is tested, and what is still in process - stated as it is today.
Chopped dehydrated white onion is filled and sealed inside a BRCGS-certified plant in Mahuva; the bag is never opened or repacked outside it.
An NABL-accredited laboratory tests each lot before loading - pesticides to EU Regulation 396/2005, microbiology, heavy metals, physical parameters - and you hold the report before the container sails.
No sulphites, no preservatives, no anti-caking agent. The ingredient declaration reads "onion" and nothing else.
Lot code and QR on every bag, linking to the plant, the harvest window and the laboratory report of that lot.
FSSAI licence and APEDA registration are in process; the numbers appear on this page the day they are issued, not before.
