The white onion is the standard of the processing industry: mild in taste, light in color, stable in production. Our raw material grows in Gujarat - India's largest white-onion region - and is dried, cut and packed in BRC-certified partner plants in Mahuva.
All five cut sizes come from the same quality line: moisture ≤ 6 %, no sulphur, no preservatives, every lot with a lab report.
Cut sizes
Same onion, same line, same lab report - five particle sizes. Pick by what the finished product should look like and how fast the onion has to rehydrate.
Drawn to relative scale. The larger the cut, the more visible the onion in the finished product; the finer the cut, the faster it rehydrates.
Products
Five cuts of the same Gujarat white onion, each with its own specification page: particle size, moisture, microbiology tier, packing and the container load.

Why white
White onion is the reference product of industrial dehydration - four properties explain why most specifications start here.
Disappears visually into light sauces, dips, bread doughs and cream soups - the onion is tasted, not seen.
Batch-to-batch variation is lower than with red onion, which is what a standardised recipe needs.
Tolerates retorting, freezing, extrusion and baking without off-notes.
The main crop of the Mahuva belt - the most stable availability and pricing of all varieties.
Choosing
The larger the cut, the more visible the onion in the end product - the finer, the faster the rehydration (flakes 15-20 min, powder instant). Unsure? We'll send samples of two or three cuts for direct comparison.
The product
What the range is, where it comes from and what it means for your specification.
Dehydrated white onion is white onion sliced, dried on a belt dryer to about 6 % moisture and then sieved, broken or milled into one of five size bands: flakes of 8-20 mm, chopped 3-5 mm, minced 1-3 mm, granules 0.5-1 mm and powder of 80-100 mesh. Eight to nine kilos of fresh onion become one kilo of dried product. Nothing is added; the flavour is the onion's own, concentrated by the loss of water, and the colour is the ivory of white onion flesh.
Manufacturers default to white onion because it disappears into a light sauce, a dough or a cream soup, because batch-to-batch variation is low, and because it tolerates retorting, freezing, extrusion and baking without off-notes. The Mahuva belt of Gujarat grows most of the white onion the world dries, which is why dehydrated white onion from here has the steadiest supply and pricing of any variety.
Overview
KlarHarvest dehydrated white onion comes from white onions grown in the Mahuva belt, harvested from March to May and dried within the season at BRCGS-certified plants. Every cut is sieved to its band, dried to 6 % moisture or less, colour-sorted and packed with nothing added: no sulphites, no preservatives, no anti-caking agent unless you specify one for granules or powder. Each lot is tested by an NABL-accredited laboratory before it is loaded, and the report travels with the goods.
We are a merchant exporter, not a plant: we select the unit, specify the lot, have it filled and sealed inside the certified plant, and ship it under our own label from Pipavav port. That is why dehydrated white onion from KlarHarvest can be ordered from a single pallet, mixed across cuts on the same pallet, and quoted with the full document set inside one business day.

Manufacturing process
Eight steps from a cured bulb to a sealed, lot-coded bag. Where a defect can enter the product, the step says so.
The belt around Mahuva lifts its white onion from March to May; the plants take it in cured, grade it by size and keep it under moving air until the dryer is ready. Eight to nine kilos of bulbs go into every kilo of dehydrated white onion.
Tops, roots and the papery skins come off first. A skin fragment or a root tuft in the finished product was decided at this station, whichever cut it ends up in.
A chlorinated wash and a belt where damaged or pink-tinged bulbs are picked out by hand before slicing.
The slicer sets the thickness; nothing is dipped. The ivory colour of dehydrated white onion is the onion and the dryer curve, never SO₂.
One layer on a multi-stage belt dryer, the air stepping down in temperature over several hours until the slices hold 5-6 % moisture.
Cooled slices become flakes on the sieve, or go through the mill to chopped, minced, granules and powder; optical sorters, magnets and sifters run ahead of packing on every line.
Low and Extra Low Bacterial lots pass a validated steam step and a second drying; Standard tier goes straight to packing.
Metal detection on every bag, then a heat seal with lot code and QR - and the bag waits in the warehouse until the laboratory report is out and you have released it.
Data sheet
The five cuts of dehydrated white onion share one quality line - moisture ≤ 6 %, foreign matter ≤ 1 %, ash ≤ 4 %, no additives, HS code 0712 20 - and differ in size, rehydration and how they stow. Each product page carries the full table.

Grading
Colour as a measured value and defects as a count per 100 g - the two things a grade actually means.
Colour is the first thing a buyer sees in dehydrated white onion and the first thing a plant argues about, so we quote it as a grade with a measured value, not an adjective. The bands below apply to every cut; the lot you receive carries its L* reading and defect counts on the certificate of analysis.

Applications
The uses this cut is specified for most often. Tell us yours and we will say whether it is the right one.
Flakes and chopped dehydrated white onion rehydrate in the pot; granules and powder dissolve into sauce bases without pieces.
Flakes toast golden on rolls and pizza in the oven time; minced onion flecks bread and cracker doughs.
Chopped white onion takes the moisture of a filling and gives deli salads and cup meals even onion pieces.
Minced white onion distributes through a mince and binds water; it doses cleanly through pasta and baking mixes.
Granules and powder are the onion note in dry blends, rubs and stock cubes: free-flowing and easy to weigh.
Powder and granules coat chips and extruded snacks and release full flavour in instant soups the moment water is added.
Packaging & export
The five cuts of dehydrated white onion share one bag and one pallet, and differ only in how much of it a container will take: flakes fill the box by volume at 9-10 t, powder hits the weight limit at 12-13 t.

Ask about your marketQuality
What is certified, what is tested, and what is still in process - stated as it is today.
Dehydrated white onion is filled and sealed inside BRCGS-certified plants in Mahuva; a bag is never opened or repacked outside the plant that sealed it.
An NABL-accredited laboratory tests each lot before loading - pesticides to EU Regulation 396/2005, microbiology, heavy metals, physical parameters - and you hold the report before the container sails.
No sulphites, no preservatives, no colour; an anti-caking agent only where you specify one for granules or powder, and then declared. The ingredient list reads "onion".
A lot code and QR on every bag point to the plant, the harvest window and that lot's laboratory report.
FSSAI licence and APEDA registration in process; the numbers appear on this page the day they are issued, not before.
Why KlarHarvest
Six things you can check before the first order, not after.
Specification, price, freight and lead time for any cut of dehydrated white onion in one document - never a partial answer.
Mixed pallets and LCL are the orders the container-only exporters ignore; we built the company for them.
The raw-material price is fixed with the plant on the day you confirm, so the quote is valid 7-10 days and carries no hidden buffer.
The certificate of analysis is issued before stuffing; the container waits for your release.
Bags counted into the box on video, the seal number recorded, the container followed to your port.
Status, photos, video and every document behind one link, from inquiry to delivery.
FAQ
What buyers ask about this range before the first order. Anything not covered here, send us the question - you have an answer within one business day.
Flakes where the onion should be seen, chopped or minced where it should spread through a recipe, granules for dosing lines and dry blends, powder where it should dissolve. Send us the application and we send samples of two or three cuts.
Standard white (L* 84-88) unless your specification asks for bright white. In-season lots from April to June often reach the bright-white band; we say so on the COA rather than charging for a promise.
One pallet - 800 to 1,000 kg depending on the cut - as LCL or as part of a mixed pallet with other cuts or with red onion.
Yes. Our lots take no sulphite dip; the colour comes from the onion and the dryer. No preservatives and no colour either, and an anti-caking agent only on request, declared.
Nine to ten tonnes of flakes, ten to twelve of chopped, eleven to thirteen of minced and twelve to thirteen of granules or powder; the exact stuffing weight is confirmed in the quotation.
Yes, in every cut: a validated steam step and re-drying, tested per lot, for ready-to-eat applications with no further kill step.
Yes. Send your target sieve specification and we quote against it; the band is agreed at order stage and confirmed on the COA.
Variety and weather. The white onion grown for drying in the Bhavnagar-Mahuva belt has low pigment and high dry matter, and the rabi harvest in March to May is cured in dry heat before it reaches the dryer. Dehydrated white onion from this belt therefore reaches the bright-white band without a sulphite dip, which is why we do not use one.
Close the inner liner, keep the bag off the floor in a dry room below 25 degrees, away from light, and use it within twelve months. Dehydrated white onion picks up moisture from the air within hours and colour from light within weeks; the sealed bag is the best store there is, so open only what the shift needs.
It loses the sharp raw pungency that comes from the enzyme reaction in a cut fresh onion, and keeps the cooked-onion sweetness and the sulphur notes that a recipe is usually after. Toasted dehydrated white onion goes further towards caramelised. For most cooked applications buyers find 1 kg of dehydrated white onion does the work of 8 to 9 kg fresh with no flavour loss they can taste.
