Curry and tandoori blends
Dehydrated red onion granules are the onion in curry, tandoori and tikka blends: free-flowing, with the red tone intact.
GRANULES · 0.5-1 MM
Dehydrated red onion granules are dosing-stable like the white granules, but with the pungency and hue of the red onion. They are the form for blends that should visibly say "more onion": curry and tandoori blends, rubs, bouillons and snack seasonings. Rehydration takes 3-5 minutes, and is usually not needed.
KlarHarvest supplies them from BRC-certified dehydration plants in Mahuva, Gujarat, with a laboratory report for every lot and shipments from a single pallet.
The range
Same onion, same line, same lot documentation - a different particle size.
Drawn to relative scale. The larger the cut, the more visible the onion in the finished product; the finer the cut, the faster it rehydrates.
The product
What the product is, why the cut size matters, and what it means for the price per kilo.
Dehydrated red onion granules are red onion sliced, dried on a belt dryer to about 6 % moisture, then milled and classified on a sieve stack so the grains fall between 0.5 and 1 mm, roughly 16-40 mesh. The trade also says "red onion granulated". Nothing is added: the standard product is 100 % onion, and an anti-caking agent goes in only on request, declared.
The grains are pale lilac-pink - lighter than the whole onion, because the pigment sits in the skin - and they flow. That is the point of the cut: dehydrated red onion granules run through automated dosing lines, blend evenly into dry seasonings without segregating and carry no dust, while bringing the sharper red onion flavour. They are among the densest cuts to ship, at 12-13 tonnes in a 20 ft container.
Overview
KlarHarvest dehydrated red onion granules come from red onions grown in the Mahuva belt of Gujarat, harvested from March to May and dried within the season at BRCGS-certified plants. The dried slices are milled, sieved to the 0.5-1 mm band, passed over an optical sorter and a magnet, and packed with nothing added: no sulphites, no preservatives, no colour, no anti-caking agent unless you specify one. Each lot is tested by an accredited laboratory before it is loaded, and the report travels with the goods.
KlarHarvest is the exporter behind the label, not the plant behind the mill: we select the unit, write the lot specification, have the granules classified, filled and sealed inside the certified plant and ship them from Pipavav under our name. So a blender can order one pallet of dehydrated red onion granules, put white granules or red powder on the same pallet, and receive specification, price, freight and lead time in one quotation within one business day.

Manufacturing process
Eight steps from a cured bulb to a sealed, lot-coded bag. Where a defect can enter the product, the step says so.
Cured red onions from the Mahuva belt, harvested March to May, are graded at the plant gate and held in ventilated stores; 8-9 kg of fresh onion become 1 kg of dehydrated red onion granules.
Tops, roots and the loose outer skin are removed; the pigmented inner skin stays. Skin that escapes this station shows up as a dark speck, so the belt is watched continuously.
A chlorinated wash and a picking belt for bruised or off-colour bulbs.
Slices cut to the thickness the dryer and mill need; no sulphite dip, no added colour.
One layer on a multi-stage belt dryer, on the gentler curve that keeps red pigment from browning, to 5-6 % moisture.
Cooled slices are milled and classified on a sieve stack; oversize is re-milled and the dust goes to powder. An optical sorter removes dark specks, and a magnet and sifter run ahead of packing.
Low and Extra Low Bacterial lots pass a validated steam step and are re-dried; Standard tier does not.
Every bag is metal-detected, sealed with lot code and QR, and held until the laboratory report is issued and you release the lot.
Data sheet

Grading
Colour as a measured value and defects as a count per 100 g - the two things a grade actually means.
The pigment sits in the skin, so dehydrated red onion granules are lighter than the whole onion they came from - and how light depends on the variety and the harvest month. We grade the cut by measured lightness before milling; the trade bands are below, the lot's reading is on the certificate of analysis.
Deep red
dark red · A grade
L*58-64
Dense burgundy skin flecks on pale flesh, even through the lot
Deep-pigment varieties, fresh-crop lots March to May

L*64-70

Most export lots in season; the usual specification

A tighter colour band or speck limit for dehydrated red onion granules is agreed at order stage and written onto the certificate of analysis.
Applications
The uses this cut is specified for most often. Tell us yours and we will say whether it is the right one.
Dehydrated red onion granules are the onion in curry, tandoori and tikka blends: free-flowing, with the red tone intact.
Meat and barbecue rubs use granules for a coarse onion note that clings to the surface and toasts on the grill without burning.
Red onion granules dissolve on rehydration in bouillon pastes and cubes and give a warmer colour than a white granule.
Dosed dry onto chips, nuts and extruded snacks with the salt and spice powders; the granule sizes evenly through a coating drum.
Sachet seasonings for noodles and instant rice use granules for fast rehydration and a visible onion particle.
Breading, pakora and batter mixes take granules so the onion flavour is even in the coat and the dry mix keeps flowing.
In your process
Three numbers decide how this cut behaves in a recipe - how fast it takes water back, how much, and how little of it you need.
Food safety
A tandoori marinade that is grilled covers Standard tier; dehydrated red onion granules dosed into a topical snack seasoning after frying never see another kill step and need Extra Low.
For blends that end in a cooked product - bouillons, marinades, kettle sauces. The default tier.
Reduced counts without the full steam treatment, for stricter blend specifications.
Steam-treated and re-dried for topical seasonings and ready-to-eat uses; counts per lot on the COA.
Packaging & export
A tonne of dehydrated red onion granules fits on one pallet and eleven or twelve pallets fill a 20 ft container to its weight limit with room to spare, so the shipping question for this cut is never volume - it is the pallet count and the liner.

Pale lilac-pink. The pigment sits in the skin, so the milled product is lighter than the whole onion it came from; the lot reading is on the COA.
Granules flow and dose precisely without the dust and clumping of powder, and still dissolve in 3-5 minutes; powder disappears instantly and tints more.
Only if you ask for one, and then it is declared. The standard product is 100 % red onion.
Yes - free-flowing and dosing-stable is what the cut is made for, and the mesh band is held lot after lot.
About 12-13 tonnes; red granules are among the densest cuts, so freight per kilo is the lowest in the range.
Standard red, L* 64-70 measured on the whole cut, unless you specify deep red. Give a range; the lot reading is on the COA.
Yes. Send your sieve specification and we quote against it; the band is agreed at order stage.
