FLAKES · 8-20 MM

Dehydrated White Onion Flakes (Kibbled) 8-20 mm

Dehydrated white onion flakes are the most-traded form of dried onion: large, light pieces that stay visible in the finished product. After 15-20 minutes in water they give the bite and taste of fresh onion at one-ninth of the weight, with no cold chain.

KlarHarvest supplies them from BRC-certified dehydration plants in Mahuva, Gujarat, the source of most of the white onion the world imports, with a laboratory report for every lot and shipments from a single pallet.

The range

White Onion Flakes vs Other Dehydrated Onion Cuts, To Scale

Same onion, same line, same lot documentation - a different particle size.

Drawn to relative scale. The larger the cut, the more visible the onion in the finished product; the finer the cut, the faster it rehydrates.

The product

What Are Dehydrated White Onion Flakes?

What the product is, why the cut size matters, and what it means for the price per kilo.

Flakes, kibbled onion and "onion 8-20 mm" are three names for the same cut: white onion sliced, dried on a belt dryer to about 6 % moisture, then sieved so the pieces fall between 8 and 20 mm. Nothing is added. The flavour is the onion's own sugars and sulphur compounds, concentrated by the loss of water; the colour is the ivory of the white onion flesh.

The cut matters because size decides behaviour. Dehydrated white onion flakes rehydrate slower than minced or granules and hold their shape through cooking, which is why they are specified where the onion should be seen: soups, sauces, bread toppings and ready meals. They are also the lightest cut for their volume, so a container of dehydrated white onion flakes weighs less than a container of powder and the price per kilo carries more freight.

Overview

Dehydrated White Onion Flakes: Product Overview

KlarHarvest dehydrated white onion flakes come from white onions grown in the Mahuva belt of Gujarat, harvested from March to May and dried within the season at BRCGS-certified plants. The flakes are sieved to 8-20 mm, dried to 6 % moisture or less, and packed with nothing added: no sulphites, no preservatives, no anti-caking agent. Each lot is tested by an accredited laboratory before it is loaded, and the report travels with the goods.

We are a merchant exporter, not a plant: we select the unit, specify the lot, have it filled and sealed inside the certified plant, and ship it under our own label from Pipavav port. That is why dehydrated white onion flakes from KlarHarvest can be ordered from a single pallet, mixed with other cuts on the same pallet, and quoted with the full document set inside one business day.

Manufacturing process

How Dehydrated White Onion Flakes Are Made

Eight steps from a cured bulb to a sealed, lot-coded bag. Where a defect can enter the product, the step says so.

Dried white onion flakes moving over the screen of a stainless vibrating sieve, smaller fragments dropping through the mesh.
  1. Receiving and curing

White onions from the Mahuva belt, harvested March to May, are cured, graded at the plant gate and held in ventilated stores; 8-9 kg of fresh onion become 1 kg of dehydrated white onion flakes.

  2. Topping, tailing and peeling

Roots and tops are cut, the outer skins removed. This is where root and skin fragments in the finished product are decided.

  3. Washing and inspection

Chlorinated wash water, then a visual pick of damaged or pink-skinned bulbs before slicing.

  4. Slicing

Bulbs are sliced to the thickness the cut needs. Our lots take no sulphite dip; the colour comes from the onion and the dryer, not from SO₂.

  5. Drying

Slices spread in a single layer on a multi-stage belt dryer, hot air stepping down in temperature over several hours, to 5-6 % moisture.

  6. Cooling, sieving and sorting

The dried slices are cooled, broken and sieved so the pieces fall between 8 and 20 mm; fines go to finer cuts, colour sorters remove dark pieces.

  7. Steam treatment, where specified

Low and Extra Low Bacterial tiers pass a validated steam step and are re-dried; Standard tier does not.

  8. Metal detection, packing and release

Every bag passes a metal detector, is sealed with its lot code and QR, and is held until the laboratory report is issued. Nothing ships before you have that report.

Grading

Dehydrated White Onion Flakes Grading

Colour as a measured value and defects as a count per 100 g - the two things a grade actually means.

Colour is the first thing a buyer sees in dehydrated white onion flakes and the first thing a plant argues about, so we quote it as a grade with a measured value, not an adjective. The bands below are the trade's own; the lot you receive carries its L* reading and defect counts on the certificate of analysis.

  1. Bright white

    extra white · A grade

    L*88-92

Applications

Dehydrated White Onion Flakes Applications and Industries Served

The uses this cut is specified for most often. Tell us yours and we will say whether it is the right one.

Instant soups and meals

Flakes rehydrate in the cup or the pot in 15-20 minutes and keep a visible onion piece, which is why soup and meal kits specify this cut.

Bread and bakery topping

Scattered on rolls, bagels and focaccia before the oven, dehydrated white onion flakes toast to a golden crust without burning at 8-20 mm.

Ready meals

A frozen or chilled ready meal takes the flakes dry into its sauce or filling; they absorb the free water and hold their shape through reheating.

Rehydrated salad blends

Soaked for 20 minutes and drained, the flakes give deli and pasta salads onion texture without the sharpness of a raw bulb.

Catering

Kitchens keep a 10-14 kg bag in dry store as a year-round onion reserve: no peeling, no cold chain, a 24-month shelf life.

Stuffings and coating mixes

Bread stuffings, crumb coaters and dry mixes use flakes for pieces that stay separate in the blend and show in the finished dish.

In your process

How to Use Dehydrated White Onion Flakes: Rehydration & Dosing

Three numbers decide how this cut behaves in a recipe - how fast it takes water back, how much, and how little of it you need.

  • Rehydration 15-20 min in cold water, faster in warm - at a ratio of about 1:8 to 1:9, so 1 kg returns the equivalent of 8-9 kg of fresh onion.
  • Dry addition in wet cooking with enough free water - soups, sauces, kettle recipes - add straight from the bag and let it rehydrate in process.
  • Dosing replace fresh onion with dehydrated white onion flakes at roughly one-ninth of its weight and adjust to taste - dried onion carries the same solids without the water.

Food safety

Dehydrated White Onion Flakes Microbiology: Standard, Low & Extra Low Bacterial

A bread topping that is baked needs Standard; dehydrated white onion flakes rehydrated into a cold deli salad need Extra Low.

Standard

For processes with a kill step - baking, retorting, kettle cooking. The default tier for most industrial use.

Low bacterial

Reduced counts for sensitive recipes and stricter customer specifications, without the full steam treatment.

Extra Low Bacterial

Steam-treated and tested for ready-to-eat applications with no further heat step. Values per lot on the COA.

Packaging & export

Packaging and Export Logistics for Dehydrated White Onion Flakes

Dehydrated white onion flakes are the lightest cut for their volume, so packing and stowage decide the landed cost more than for any other cut. This is how a lot is packed and shipped.

FAQ

Dehydrated White Onion Flakes - Frequently Asked Questions

What buyers ask about this cut before the first order. Anything not covered here, send us the question - you have an answer within one business day.

Are onion flakes the same as kibbled onion?

Yes - "kibbled" is the traditional trade term for dehydrated white onion flakes in the 8-20 mm cut. We quote the size band explicitly, so the word never matters.

Which colour grade do you supply by default?

Standard white (L* 84-88) unless your specification asks for bright white. In-season lots from April to June often reach the bright-white band; we say so on the COA rather than charging for a promise.

Why does a 20-ft container hold only 9-10 tonnes of dehydrated white onion flakes?

Low bulk density: flakes are the lightest cut for their volume, so the container fills by volume before it reaches its weight limit. Finer cuts stow 12-19 tonnes.

Can I mix flakes with other cuts on one pallet?

Yes. Powder and granules go at the bottom, flakes on top, and the pallet ships as one line item with one document set.

Do I need to rehydrate dehydrated white onion flakes before use?

Not in wet cooking with enough free water. For frying or dry applications, rehydrate first - 15-20 minutes in cold water.

Can I get a custom size band?

Yes. Send your target sieve specification for dehydrated white onion flakes and we quote against it; the band is agreed at order stage.

Which markets do you ship to?

Anywhere a container sails from Pipavav. The document set differs by destination - the EU, the UK, the USA and the Gulf are described above - and it is confirmed with your quotation.
