Seasoning bases and sauce powders
Dehydrated white onion powder dissolves on contact with water, so it is the onion in soup bases, sauce powders and gravy mixes.
POWDER · 100 MESH
Dehydrated white onion powder dissolves instantly and carries full onion flavour into any homogeneous application - from seasoning bases to extruded snacks. Milled to 80-100 mesh, with a food-grade anti-caking agent available on request and declared.
KlarHarvest supplies it from BRC-certified dehydration plants in Mahuva, Gujarat, with a laboratory report for every lot and shipments from a single pallet.
The range
Same onion, same line, same lot documentation - a different particle size.
Drawn to relative scale. The larger the cut, the more visible the onion in the finished product; the finer the cut, the faster it rehydrates.
The product
What the product is, why the cut size matters, and what it means for the price per kilo.
Dehydrated white onion powder is white onion sliced, dried on a belt dryer to about 6 % moisture, then milled and sifted through 80-100 mesh, roughly 150-180 microns. The trade calls it "onion powder", "white onion powder" or "ground onion". Nothing is added: the standard powder is 100 % onion, and an anti-caking agent goes in only on request, declared on the label.
The powder is the form for applications with no texture to restore: seasoning bases, sauce and soup powders, marinades, snack coatings, extruded products. It dissolves into the liquid phase, blends without specks and doses in grams, because 1 kg carries the solids of 8-9 kg of fresh onion. It is also the most hygroscopic form, which is why the liner, the seal and first-in-first-out storage matter more for dehydrated white onion powder than for any other cut.
Overview
KlarHarvest dehydrated white onion powder comes from white onions grown in the Mahuva belt of Gujarat, harvested from March to May and dried within the season at BRCGS-certified plants. The dried slices are milled in a temperature-controlled pass, sifted through 80-100 mesh in a dry room and packed within minutes with nothing added: no sulphites, no preservatives, no anti-caking agent unless you specify one. Each lot is tested by an accredited laboratory before it is loaded, and the report travels with the goods.
Between the plant and the port there is a merchant exporter with its own godown: we select the unit, write the lot specification, have the powder milled, filled and sealed inside the certified plant and ship it under our label from Pipavav. For a seasoning house that means dehydrated white onion powder from a single pallet, shared with granules or flakes when the line needs both, and a quotation with the specification sheet, price, freight and lead time inside one business day.

Manufacturing process
Eight steps from a cured bulb to a sealed, lot-coded bag. Where a defect can enter the product, the step says so.
White onions from the Mahuva belt, harvested March to May, are graded at the plant gate and held in ventilated stores; 8-9 kg of fresh onion end up as 1 kg of dehydrated white onion powder.
Tops, roots and outer skins are removed. Skin left behind becomes a dark speck in the powder, so the peel line is inspected continuously.
Chlorinated wash water, then a picking belt for damaged or pink-skinned bulbs before slicing.
Slices are cut to the thickness the dryer needs. No sulphite dip - the colour comes from the onion and the dryer curve.
Single-layer drying on a multi-stage belt dryer, air temperature stepping down over several hours to 5-6 % moisture.
Cooled slices are milled in a temperature-controlled pass so the volatile flavour is not driven off, then sifted through 80-100 mesh; oversize returns to the mill. Because powder is hygroscopic, milling and sifting run in a dry room and the bag is sealed within minutes.
Low and Extra Low Bacterial lots pass a validated steam step before milling and are re-dried; Standard tier does not.
Every bag passes a metal detector, is sealed with its lot code and QR, and is held until the laboratory report is issued and you release it.

Grading
Colour as a measured value and defects as a count per 100 g - the two things a grade actually means.
Powder shows colour as a tint in whatever it goes into, so dehydrated white onion powder is graded by measured lightness before it is milled. The trade bands are those of the whole cut; the lot's own L* reading and speck count sit on the certificate of analysis.

Applications
The uses this cut is specified for most often. Tell us yours and we will say whether it is the right one.
Dehydrated white onion powder dissolves on contact with water, so it is the onion in soup bases, sauce powders and gravy mixes.
Dosed with the salt and flavour powders onto extruded and fried snacks; the fine 80-100 mesh grind coats evenly without specks.
Powder disperses in oil, yoghurt or brine within seconds and carries onion flavour into the meat without pieces that burn on the grill.
Instant soups, noodle seasonings and cup meals rely on onion powder for full flavour release the moment hot water is added.
Blended into cracker, breadstick and savoury biscuit doughs at the mixer, powder flavours the whole crumb without changing its texture.
A base note in curry powders, garlic-onion blends and table shakers; a free-flowing grade keeps the blend from caking in the jar.
In your process
Three numbers decide how this cut behaves in a recipe - how fast it takes water back, how much, and how little of it you need.
Food safety
A sauce base that is cooked can use Standard powder; a seasoning dusted onto snacks after frying never sees another kill step, and that line needs Extra Low dehydrated white onion powder.
For sauce bases, soups and instant products that are cooked - the default tier for most industrial use.
Reduced counts without the full steam treatment, for stricter customer specifications.
Steam-treated before milling and re-dried, for topical snack seasonings and other ready-to-eat applications; counts per lot on the COA.
Packaging & export
Dehydrated white onion powder is the densest form in the range and the most hygroscopic, so the liner, the seal and first-in-first-out storage decide its shelf life more than anything else in the packing instruction.

FAQ
What buyers ask about this cut before the first order. Anything not covered here, send us the question - you have an answer within one business day.
The sieve band the powder is milled to - roughly 150-180 microns, fine enough to dissolve instantly and blend without specks.
Only on request, and always declared. The standard powder is 100 % onion.
Keep it sealed, cool and dry, reseal opened bags at once and work first-in-first-out - the powder is hygroscopic.
Stronger by weight: 1 kg carries the solids of 8-9 kg of fresh onion, which is why it is dosed in grams, not handfuls.
About 12-13 tonnes. The powder is the densest form, so the container reaches its weight limit long before it is full.
Standard tier is not. Low and Extra Low Bacterial tiers pass a validated steam step before milling and are re-dried; the counts are on the certificate of analysis.
Yes. 60-80 mesh and finer than 100 mesh are milled to order; the band is agreed at order stage and confirmed on the COA.
